One bottle for the table, one for the pot and one for Crabby whilst cooking.<br /><br />Seriously, I like to serve a better quality wine but of the same type as I poured in the pot. If you cook with Cabernet, serve Cabernet, if you cook with Syrah, serve Syrah.<br /><br />This recipe calls for 2 cups for the pot, leaving one third of the bottle for the chef. That will do in a pinch.<br /><br />Cono Sur out of Chile makes nice affordable Pinot Noir.
